A simple and healthy alternative to chinese fried rice...

2 cups cooked brown rice
1/2 cup sliced mushrooms
1/4 - 1/2 cup diced white onion
1/4 - 1/2 cup peas, part cooked
4 egg whites
1 tsp. Ginger
2 garlic cloves, minced
1/4 - 1/2 cup sliced carrots (on the diagonal)
1/4- 1/2 cup sliced celery (on the diagonal)
1 can sliced waterchestnuts, drained
1 tbsp. MCT oil or olive oil
Shoyu to taste

Instructions:
1. In a wok add oil and heat.
2. Add shoyu to taste and saute onions and garlic.
3. Add mushrooms, carrots, celery, ginger and rice.
4. When almost completely fried, add beaten egg whites and water chestnuts.
5. The rice is done when the eggs are completely scrambled into the rice.
*Can add strips of chicken breast or fake chicken strips if desired.
