This is a recipe Kim invented... and what fun.... like a flying horse (is it half-bird, half-horse?), this is half-scrambled eggs, half-omelette. Meet the Scromelette!


4 whole eggs, beaten
diced onion and portabello mushrooms
crumbled feta cheese


Instructions:
1. In a saute pan, fry onions and portabellos until soft.
2. Add eggs and fry in pan like you're making an omelette.
3. When it is almost done, add feta cheese and scramble!
